Baby Food Favorites

One of my new year's resolutions was to start making baby food again. When we first introduced solids I was making her food myself. Then we moved and life got hectic, and then I just came up with excuses not to do it. I don't have any strong feelings against the store bought food, but there are pros to making your own food. You know exactly what goes in to the recipe, and it is cheaper. And it is easier than I thought it was going to be! I needed a little motivation to get back to business, so I bought the Start Fresh cookbook. My mother in law has been so sweet to help me with my resolution. We pick an afternoon and go to her house, and she helps me with Peanut and then helps me chop and blend while Peanut naps. Her help is probably the main reason that making her food has been so quick and easy. After an afternoon at her house, we have food for the next 2-3 weeks. I transfer the food to ice trays to freze it, then pop the cubes out and store in a ziploc bag in the freezer. I give her 2-3 cubes per serving. 

Peanut has liked almost everything I have tried, but she does have some favorites! All of the following recipes are from the Start Fresh cookbook by Tyler Florence. 
Carrot, Mango, & Apple Puree
3 medium carrots, peeled
1 mango, cut into chunks
2 medium granny smith apples, cored

Preheat the oven to 350. Arrange the carrots, mango, and apples on a rimmed baking sheet and roast until the fruit has browned and carrots are tender, 20-25 minutes. Scrape the fruit and carrots into a blender and puree until smooth.

Roasted Apples & Cinnamon
4 large granny smith apples, cored
1 tsp. fresh lemon juice
1/2 tsp. cinnamon
pinch of salt

Preheat the oven to 400. Arrange the apples, cut-side down, on a rimmed baking sheet. Roast the apples until tender when pierced with a fork, 20-25 minutes. Transfer the apples to a bender. Add the lemon juice, cinnamon, and salt and pulse the apples until smooth.


Spinach & Banana Puree
12 ounces fresh spinach, well washed and tough stems removed
2 bananas
1/4 cup plain whole-fat yogurt
1/4 cup apple juice

Combine all the ingredients in a blender or food processor. Puree until smooth.

I think the spinach & banana puree might be her #1 favorite. It also happens to be the messiest. I am excited about adding different things to this to mix it up. Next time I am going to add strawberries or blueberries, or maybe both. I'm hoping to transition this recipe into a green smoothie as she gets a little older.
