Last week we made Greek Chicken kabobs in an effort to recreate Zoe's chicken kabobs. We love grilling and kabobs, so this was a fun new recipe to try! Fletcher assembled the kabobs and I handled the sides. We served the kabobs with roasted red potatoes and roasted broccoli. These were great! We will definitely be making them again soon.
Greek Chicken Kabobs:

1 (5 oz) container plain Greek yogurt
1 tsp. lemon zest
Juice of one lemon
1 tsp. vinegar
1 tsp. sugar
1 tsp. salt
1 tsp. pepper
1 and 1/2 tbsp. Greek seasoning
4 boneless skinless chicken breasts
Red onion, cut for skewers
Red bell pepper, cut for skewers
Mix all ingredients (except the onions, bell peppers, and grape tomatoes) together in a bowl. Cube the chicken and soak in the Greek marinade for 3-24 hours. We were only able to marinate for an hour, but next time we will do it overnight! Assemble kabobs with chicken, red onions, red pepper, and grape tomatoes. Grill for 12-15 minutes.
