Lemon Cookies

One of the new recipes I tried this Easter was lemon cookies. Small, soft, citrusy cookies with a lemon glaze. There is something so fresh and springy about these little cookies. I will definitely be making them again throughout the spring and summer months. Here is how it goes...Preheat oven to 350, line baking sheet with silicone mat or parchment paper. Combine flour, baking soda, and salt in a small bowl and set aside. 
 In a small bowl, mix sugar and lemon zest. Rub together with your fingers, until fragrant. Beat softened butter and sugar mixture together until fluffy. Beat in egg and vanilla extract, mix until smooth. Slowly beat in flour mixture on low speed. Drop dough by tablespoon onto baking sheets, gently flatten with the palm of your hand. 
 Baked for 12-14 minutes, or until cookies are set. Cool cookies on baking sheet for 2 minutes, then transfer to cooling racks. Let the cookies cool completely. Whisk together powdered sugar and lemon juice to create the glaze. Dip each cookie in the glaze and let sit until the glaze has set. 

Glazed Lemon Cookies
2 and 1/4 cup AP Flour
1/2 tsp. baking powder
1/2 tsp. salt
3/4 cup granulated sugar
2 Tbsp. lemon zest
1 cup unsalted butter, room temp
1 egg
1 tsp. vanilla extract

1 cup powdered sugar
4-5 tsp. fresh lemon juice
