Friday Cookies

Happy Friday! I have a yummy cookie recipe for you to try this weekend. You could take it to your super bowl party or you could make them just because. I tend to be a "just because" kind of cookie person. Cookies are my weakness. I found this recipes on Two Peas and their Pod. Their recipes have never been a disappointment.

Salted Caramel Chocolate Chip Cookies
2 cups AP Flour
2 tsp. Cornstarch
1 tsp. Baking Soda
1/2 tsp. Sea Salt
3/4 cup Unsalted Butter (room temp)
1 cup Brown Sugar
1/4 cup Sugar
1 Large Egg
2 tsp. Vanilla
1 cup Semi-Sweet Chocolate Chips
1/2 cup Caramel Bits*
Sea salt, for sprinkling on cookies
*I used caramel squares and cut them up into bits.

Preheat oven to 350. Line a baking sheet with a silpat or parchment paper (I didn't do this, just gave it a light spray). In a large bowl whisk flour, cornstarch, baking soda, and sea salt together - set aside. In a mixer cream together butter and sugars until smooth and creamy (about 3 minutes). Add egg and vanilla extract and beat until combined. Gradually mix in the dry ingredients. Stir in chocolate chips and caramel bits. Form cookies into balls and place on baking sheet. Sprinkle with sea salt. Bake for 10 minutes, or until edges are brown.

These cookies are chewy and delicious! I love the salty + sweet combination.
