Wedding Weekend in Atlanta

This weekend we traveled to Atlanta for Fletcher's friend Brad's wedding. Brad and I went to high school together, then (before Fletcher and I started dating) Brad and Fletcher became good friends in college. Brad and Sarah started dating after we finished at Auburn, so it was so neat to see them together and to hear more stories about their relationship. It was so fun to get to be a part of their big day.  We enjoyed getting to celebrate with this sweet couple.
 It was so great to get to catch up with Kari and Dan at the wedding. I always love getting time with this sweet friend.

October Favorites

I'm loving all things fall.  Favorite month of the year, please don't end!
Sweet cinnamon pumpkin soap. I'm a sucker for a good soap and this one is my fall favorite. 
Autumn festival candle. We are still working on Fletcher's appreciation of my love for candles, but this one is THE BEST! 
Purchased this cd bright and early Monday morning. And I love it. I'm a huge Taylor Swift fan...and not ashamed!
If you don't already watch Parenthood, then it's about time you start. This is no doubt my favorite show on television. Tuesday nights you'll find me in front of the tv in tears. It gets me every.time.
The fourth quarter is here and the long work days have started. Earlier this week the sun was rising on my drive in to work. I had to pull over to take a picture...It was incredible. I am so thankful for the ways the Lord reminds us of His presence.

Weekend Recap

This weekend was exactly what this weary girl needed. We have been on the go so much lately and my tank was beginning to feel a little empty. Saturday morning Fletch and I went to a local state park and hiked. The trees are just starting to change and the weather was perfect! Never underestimate the power of being outside and enjoying God's creation. In this fast paced world, there is nothing like a little time outside. 
 Saturday afternoon was the second annual Flynn-Cook bonfire. The boys spent the afternoon cutting down trees, chopping wood, and throwing whatever they could find into the giant fire. They loved it. 
 The nephew man is ready to be old enough to hang out with the guys for the bonfire. For now, he gets to sit inside with the girls and look out the window.

 And the girls favorite part of the bonfire...S'mores. Another bonus of a weekend at home - finally catching up on things around the house. Overall the weekend was a perfect mix of relaxation + fun + productivity. It was good for my soul.

Chicken Enchiladas

I have tried various chicken enchilada recipes over the years, but none of them have quite hit the spot...until this recipe. This recipe is from the Junior League of Birmingham's cookbook and it is the recipe that Fletcher's mom makes. One night a few months ago Fletcher requested the recipe, and I am so glad he did! I have finally found my go to enchilada recipe. I do not like the taste of enchilada sauce, so I think that is part of the reason I had such a hard time finding a recipe I liked. 

Creamy Chicken Enchiladas
Boneless, skinless chicken breasts, cooked
1 Tbsp. butter
2 Tbsp. chopped onion
2 Tbsp. chopped green chiles
3 oz. cream cheese, diced
10 tortillas
1 cup whipping cream
1 cup grated monterey jack cheese
1 cup salsa

Cook chicken. In a saucepan, melt butter. Add onion and saute. Add green chiles and cream cheese, stir constantly until blended. Remove from heat and stir in chicken. Soften tortillas according to package directions. Place about 3 tbsp. of chicken mixture into tortillas and top evenly with salsa and cheese. Roll up tortillas and place, seam-side down in a greased casserole dish. Pour whipping cream over enchiladas, top with remaining cheese. Cook at 350 for 25 minutes or until hot and bubbly.

Auburn Weekend

Last weekend I got to spend some great quality time in Auburn with my sweet engaged friends. Lacey and her family were there so that her little sister Maggie could see Auburn again (in the midst of trying to make her big college decision). And Anna's family was in Auburn to see her little sister who is a freshman. The game was definitely the low point of the weekend (clearly Auburn football is struggling), but we had the best time just getting to be in Auburn and spend time with each other. We enjoyed getting to walk around Auburn and see all the changes, and of course all our old favorite places.

I loved getting to spend time with these two and hear all about their wedding planning details. Anna is getting married June 1st and Lacey is getting married July 20th. It is hard not to live in the same place with them during this exciting time in their lives, but it makes weekends like this all the more special. 
I also got to check another item off the "100 things" list. This is the crabcake and avocado sandwich from Amsterdam Cafe. I always get the same sandwich at Amsterdam, but since I had just gotten to eat there the weekend before I ventured out. It was really great!

Zach & Meredith's Wedding

Last weekend we hit the road to Lagrange to celebrate Fletcher's friend Zach's wedding. Zach and Meredith met at a pharmacy conference and started a friendship that developed into a relationship. Fletcher and Zach have been friends since college, so I have gotten the pleasure of getting to know Zach pretty well over the years. It was fun to get to be a part of his wedding weekend! Fletcher has been my date to many weddings where I was a bridesmaid, so it was definitely my turn to be his date while he was a groomsman. I kept myself entertained with a trip to Auburn on Saturday to visit my friend Kari. We enjoyed our weekend in Lagrange celebrating the Millers!

Tomato Soup + Grilled Cheese Croutons

Fall is in the air and soup is on my brain! Last night I tried a tomato soup recipe from the Food Network Magazine. It is Ina Garten's recipe and she pairs it with gruyere grilled cheese croutons. The recipe is super easy! It is a little time consuming, but most of the time is spent waiting not working. 

In a large pot, heat the oil over medium heat. Add the onions and cook over medium heat for 15 minutes, stirring occasionally. Add the garlic. and cook one more minute. Stir in the chicken stock, crushed tomatoes, saffron, 1 tablespoon salt, and 1 teaspoon pepper. Bring the soup to a boil, then reduce heat and let simmer for 15 minutes. 

Meanwhile, fill a medium pot with water and a pinch of salt, then bring to a boil. Add the orzo and cook for 7 minutes. After 7 minutes, drain the orzo, and pour into the soup pot. Stir in the cream, return the soup to a boil, and cook for 10 more minutes (stirring frequently). 

During the last waiting period for the soup, I buttered up some country white bread, sliced the gruyere cheese and made the grilled cheese sandwiches. I cut the sandwiches up and sprinkled on top like the recipe suggested, then also made an extra grilled cheese sandwich for the side. I've been a grilled cheese lover since the day I learned to chew!
We happened to have a chilly october night and the soup hit the spot! It says it makes 4 to 6 servings, but it felt like a lot for just two people. I'm enjoying the leftovers again today, then I think I might freeze the rest. 

Tomato Soup:
3 Tbsp. Olive Oil
3 cups yellow onion, chopped (I reduced this a little bit)
1 Tbsp. Minced Garlic
4 cups chicken stock
1 (28 oz) can crushed tomatoes
Large pinch of saffron threads (in the spice section at the grocery store)
Kosher salt and ground pepper
1/2 cup heavy cream
1/2 cup orzo

Grilled Cheese:
4 slices white country bread
2 Tbsp. unsalted butter
4 oz. Gruyere cheese

September in Review

September flew by! We spent A LOT of time on the road but enjoyed getting see so many people we love. Here is a look back at the month from my phone, if you follow me on instagram, sorry this is nothing new to you...
We celebrated the fur baby's first birthday. Man's best friend. We love her so much!
We kicked off September with a wonderful weekend at my brother in law's parent's lakehouse in Georgia. The weekend so relaxing and his parents spoiled us with delicious food. 

This month I unexpectedly got to see ALL the munchkins. It was such a treat. And this little munchkin below is going to be a big brother come Spring 2013. I am BESIDE MYSELF that I will get to be in the same city as a newborn niece or nephew.  And I know he is going to be the sweetest big brother. 

The Fall menu started at work. These pumpkins muffins baking outside my office every morning are going to be a problem. 

Can't get enough of Ellie Holcomb's cd on my roadtrips. If I hear Katy Perry or Pink one more time I might scream. Too much time in the car=too much time with the radio. Ellie Holcomb is a good break for my ears and good for my soul. 
Enjoyed Emily Giffin's new book this month too. I was pleasantly surprised with how much I enjoyed reading it. I haven't loved all of her books, but this one was great. 

Got my first ever flower delivery at work from my sweet friend Anna. 

September wrapped up with a weekend in Lagrange for Fletcher's friend Zach's wedding.

While Fletcher was busy Saturday with wedding festivities, I popped over to Auburn for lunch and enjoyed time with my friend Kari. I came away reminded of what a treasure old friendships are. We came back from Lagrange and enjoyed a LAZY rainy Sunday afternoon. I am starting to feel a bit like I am running on empty and was thankful for an excuse to catch up on my magazines and watch the rain. Now on to October, my favorite month of the year!
