This week I tried a new recipe for fried rice. The recipe was chicken fried rice, but I left the chicken out and paired the rice with sweet and sour chicken. Here is what you need for the fried rice...

First you whisk the egg with 1 tsp of the wok oil and set aside. It was helpful to have all the ingredients laid out. This recipe moves pretty fast, so it was helpful to already have the portions measured out and ready to go.
Heat 1 tsp of oil in a skillet over medium-high heat. Add frozen minced vegetables and green onions. Stir fry until tender, about 2 minutes. Then add the garlic and cook for 30 more seconds. Push the vegetables to the side and then add the egg/oil mixture to the center and scramble.
Add rice and soy sauce to skillet then toss well to combine.
Once the rice was ready I pulled the sweet and sour chicken out of the oven. I loved the two combined flavors. The husband voted that next time I do chicken fried rice (instead of with the sweet and sour chicken). He said each dish (sweet and sour chicken & fried rice) gets 4.5 stars by itself, but he liked each better by itself than combined. I really liked them together! So I guess it is just personal preference.

2 green onions, chopped
1 clove garlic, minced
2 tsp. sesame or wok oil
2 Tbsp. soy sauce
