Celebrating Lacey & Sam

This weekend I got the the joy of celebrating with my very best friend when she got engaged. Lacey and Sam went on their first date on New Year's Eve and the sparks have been flying ever since. These two are crazy about each other and it has been so fun to watch their relationship grow. Sam's parents had a little get together after Sam proposed. It was so fun to get to be there to celebrate with them.

Leaving a Legacy

This week my grandfather went to be with Jesus. In a week full of all sorts of emotions, there is one overwhelming feeling that keeps coming to the surface. I am struck by how much I have to learn from my grandfather. He impacted so many lives because of his simple love for Jesus, and the way it expressed itself in his daily life.
I want to love unconditionally.
I want to put others before myself, no matter how well I know them.
I want to give generously.
I want to be quick to encourage others.
I want to serve the church.
I want to serve my family.
I want to live like Jesus.

My grandfather lived his life as a reflection of his love for Christ. He lived his life as Philipians commands: "Do nothing out of selfish ambition of vain conceit, but in humility consider others better than yourself. Look not only to your own interests, but also to the interest of others. Your attitude should be the same as that of Christ Jesus."

I am thankful for his legacy and pray that I never forget his example.

Fried Rice + Sweet & Sour Chicken

This week I tried a new recipe for fried rice. The recipe was chicken fried rice, but I left the chicken out and paired the rice with sweet and sour chicken. Here is what you need for the fried rice...

First you whisk the egg with 1 tsp of the wok oil and set aside. It was helpful to have all the ingredients laid out. This recipe moves pretty fast, so it was helpful to already have the portions measured out and ready to go. 
Heat 1 tsp of oil in a skillet over medium-high heat. Add frozen minced vegetables and green onions. Stir fry until tender, about 2 minutes. Then add the garlic and cook for 30 more seconds. Push the vegetables to the side and then add the egg/oil mixture to the center and scramble.
Add rice and soy sauce to skillet then toss well to combine.
Once the rice was ready I pulled the sweet and sour chicken out of the oven. I loved the two combined flavors. The husband voted that next time I do chicken fried rice (instead of with the sweet and sour chicken). He said each dish (sweet and sour chicken & fried rice) gets 4.5 stars by itself, but he liked each better by itself than combined. I really liked them together! So I guess it is just personal preference.

2 cups prepared rice
1/2 cup frozen mixed vegetables
2 green onions, chopped
1 clove garlic, minced
1 egg
2 tsp. sesame or wok oil
2 Tbsp. soy sauce
