Hello Monday Morning! It is always sad to see the weekend go. The hubs worked all weekend and I worked on things on the home front. It finally feels like we are making some progress on our many projects, and there is one in particular I can't wait to share this week. But for today...a recipe! The recipe comes from James Farmer's blog. It is a recipe that seems fancy, but is super easy and quick. Every time I make them I wonder why I don't make them more often.
You mix together salmon (canned), mayonnaise, onion powder, panko, salt, pepper, and 1 egg. You have to mix it with your hands and form it into a patty. Then coat each croquette in panko, coating all sides. Fry the croquettes in a cast iron or heavy skillet. Heat the oil on medium high then add the croquettes. Cook about 4 minutes on each side, or until cooked through. I served them with cheese grits and really liked the combo.
2 cans of Salmon - 14.75 oz. (no bones, just meat)
Half cup of Mayonnaise
3/4 tsp. Onion Powder
Salt and Pepper to taste
2 cups of Panko -1 for mixture, 1 for outside
1 large Egg
Canola Oil for frying
*I cut this recipe in half and it was the perfect amount for 2.
