Do you ever crave Chick-Fil-A on a Sunday? If I'm being honest I crave Chick-Fil-A every day, but that is beside the point. When I saw a recipe online for "Chick-Fil-A nuggets" I had to try it just to see if it was possible to recreate my favorite fast food meal. And since you can't get Chick-Fil-A on a Sunday it was the perfect day to try it. They were delicious! Chick-Fil-A still has one up on me, but these nuggets were a close second! We ate them with Sweet Potatoes and BBQ sauce.

First, you whisk together the milk and the egg. Cut Chicken up into bite size pieces and let them soak in the milk/egg mixture for 2-4 hours. Once the chicken is done "marinating", mix together flour, powdered sugar, salt, and pepper in a big Ziploc bag. Take chicken out of milk mixture and shake in the Ziploc bag until chicken is coated in flour mixture.

Heat about 2 inches of oil in a medium deep pot. Once oil is hot, drop in nuggets and heat a few minutes on each side (nuggets will get crispy). Make a small cut in the chicken to double check that it is cooked all the way through. Remove and drain on a paper towel. Once they are all finished, grab your favorite dipping sauce and enjoy!

Chicken Nuggets:
Boneless Skinless Chicken Breasts
1 cup skim milk
1 egg
1 and 1/4 cup flour
2 Tbsp. Powdered Sugar
2 tsp. Salt (We ended up adding more, probably an additional tsp.)
1 tsp. Pepper
Peanut Oil

Southwest Chicken Wraps

It seems like it has been a while since I posted a recipe. Our lives have been so hectic I have been sticking to the staple/easy recipes when it comes to dinner. I have a stack of recipes I'm itching to try, and this was at the top of my list-Crispy Southwest Chicken Wraps!

Mix rice together with chili powder, cumin and garlic salt.Next, I chopped up the cilantro, red pepper, and green onion then added these to the rice mixture.

Once the chicken was cooked I cut it up and added it to the rice mixture.

Spread sour cream on the tortillas, then sprinkle with cheese. Next, add the chicken mixture down the middle of the tortilla and then roll up the tortillas. Spray with cooking spray and place in a hot non-stick pan or griddle. Heat 2-3 minutes on each side.

Once they come out of the pan, just cut them in half and serve. I accidentally bought the "Long" burrito tortillas so mine were kind of big!

The recipe calls for beans and I didn't want beans in mine so I was going to wait until the end to add them...but then I forgot! Fletch didn't seem to mind though. He said that this was the best meal he had had in 8 months. I wasn't sure what made him choose the 8 month time frame, I guess that means it's the best meal he has had in 2011? Either way, it was a hit! It will be going in the recipe box for sure!

Southwest Chicken Wraps:
1 cup cooked rice, warm or at room temperature
1 cup cooked, shredded chicken
1 can black beans, rinsed and drained
1 green onion, finely sliced (white and green parts)
1/2 red pepper, diced
1/4 cup fresh cilantro, chopped
juice of 1 lime
1/2 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon garlic salt
2 cups shredded cheese
Sour cream

Mrs. Rachel Groshart

Thursday we traveled to Memphis to celebrate my sweet friend Rachel and her marriage to Kenny. Thursday night we had the rehearsal and the rehearsal dinner at Chickasaw Country Club. Rachel has one of the sweetest hearts and it was evident through the toasts how many people she has loved so well over the years.

Friday morning was the Bridesmaid's Brunch. My sweet mom hosted it with the help of my grandmother and two others. It was beautiful! I want to know how to host a party like my mom, don't moms just do everything best?

I recently took a Calligraphy class and I was so excited to have my first mom let me do the place cards for the brunch!

Before we knew it, it was time to head to the church to start getting ready. First matter on the agenda was the hair of course!

Rachel was such a beautiful bride. She was truly radiant-Beautiful on the inside and out. It was such an honor to stand beside her as she said "I Do."

Of course the weekend wouldn't have been the same without this sweet boy...

The reception was wonderful too...

The Help

As you know The Help was on my summer reading list. It ended up being one of the last books I read on my list. I started it a little over a week ago, and instantly loved it, but hardly had time to read it. Fletcher's mom got to see a premiere showing of the movie in the middle of July and said that we had to all go see it once it came out. So we made plans to go see it on opening night. Two days before I was feeling discouraged because I had nearly 200 pages left to read and we had tickets for the 7:15 showing on Wednesday night. But I am proud to say I finished it just minutes before we left to go to the theater. I have never read a book and then seen the movie in such a close time period, and I was in awe of how much the movie matched the book. There were minor differences, but if I hadn't just finished the book I probably wouldn't have even realized. I can't say enough good things about the movie...Here is all I will say-It is one that will have you bursting with laughter and then moved to tears. It is a touching story of an unlikely friendship, and a movie that I will want to see again and again.

Rachel's Bachelorette Weekend

This past weekend I went to Nashville for Rachel's Bachelorette Party. Rachel and I have been friends since the nursery! It was a good weekend of celebrating the bride to be. Just 11 more days until she becomes a Groshart...The weekend involved a lingerie shower, eating yummy food, karaoke, and downtown Nashville.
