BBQ Chicken

Over the last week I've been adjusting to a new work schedule and have been a bit out of sorts. I knew this week was going to be hard, waking up in the hour of 5 was bound to be an adjustment. So I cooked this chicken on Sunday and we ate it 3 different times in 3 different ways. It was nice to have easy dinners this week since I've been dragging a bit. It actually made so much that we still have more in our refrigerator, but I'm not sure I can eat it 4 times in one week! Even though it was yummy, that is a little over the top. You know how much I love my crock pot, so I loved a reason to break it out during the summer...

The first night we had BBQ Chicken Baked Potatoes...

Night #2 BBQ Chicken Sliders with sweet potatoes and green beans.

Night #3 BBQ Chicken Calzones (just added a little bbq sauce and cheese and put it inside pizza dough). Forgot to photograph this night!


Slow Cooker BBQ Chicken
8 ounce can tomato sauce
1 4 ounce can of chiles, chopped (I didn't do the whole can)
3 Tbsp. Cider Vinegar
2 Tbsp. Honey
1 Tbsp. Paprika
1 Tbsp. Tomato Paste
1 Tbsp. Worcestershire Sauce
2 tsp. dry mustard
1/2 tsp salt
2 and 1/2 pounds boneless skinless chicken breasts
1 small onion, finely chopped
1 glove carlic, minced
