Sunday Eats

Sunday Morning I made chocolate chip pancakes using a "Pancake Pen" that Lace gave me back in the Fall. It was so fun to use! My hearts turned out a little bit warped, but they were still delicious!

Last night for dinner we had fish tacos. I have been wanting to try fish tacos for a while, but have been really intimidated by them! I haven't had a lot of experience cooking fish, and so I think that is what made me scared to try the fish tacos. But this week when I saw Tilapia on sale at Publix I decided it was time to try fish tacos. I looked at two different Cooking Light fish taco recipes. I made a Lime-Cilantro Crema from one recipe, then used another recipes for the fish tacos. We really liked the Lime-Cilantro crema, it gave the tacos a very fresh taste. I slightly modified the Cooking Light recipe, but here is what I used...

All you do is combine everything, and refrigerate until it is time to use!

Combine taco seasoning, orange juice, and lime juice, and coat fish. Then heat oil in a skillet and saute until fish is done.

It was really simple, but still really good! The crema definitely added another dimension to the taste. It is one that I will be making again...Healthy and delicious!


Lime-Cilantro Crema:
1/4 cup fresh cilantro, chopped
2 Tbsp Fat Free Mayonnaise
4 Tbsp Light Sour Cream
1 and 1/2 tsp. Fresh Lime Juice
1/4 tsp. Salt
1 Garlic Clove, minced

Baja Fish Tacos:
2 Tbsp. Taco Seasoning
1 Tbsp. Fresh Lime Juice
1 Tbsp. Fresh Orange Juice
1 lb. tilapia
Iceburg Lettuce (can substitute cabbage)

The Letter F

Yesterday I got a cd of my wedding pictures in the mail and it made me so happy! It made me
realize there were parts of the wedding I never blogged about! So...wedding posts are about to be happening again! First of all, I wanted to talk about the F that was all over our wedding. We had a graphic designer do our invitations, and we wanted the letter F at the top with some kind of design. So she came up with this F that we used over and over again. The week before my wedding my sister said "I'm glad I like that F because I see it every time I turn around. " In addition to being on top of our invitation it was on our program...

Peep Toe Clogs

During this in between time of winter and spring I have found myself very dissatisfied with my shoe collection. First of all, I've worn 5 different shoes all winter: clogs, uggs, brown boots, black flats, or my toms. So I'm already tired of those, but I can't really bring out the sandals yet since it is still February (even though the weather is sandal friendly). So I have found myself on a shoe hunt. Also, as a newlywed trying to stick to a budget I am always on the hunt for a good deal. I was so pleased when I saw target's copy cat of anthropologie's new shoe...

DIY Headboard

This weekend Fletcher and I finished a product that we had started in December. During the craziness of the holidays we dropped the project, and kind of forgot about it...but this weekend we finished it and I am so pleased with the outcome! I have been loving the nail head look that is popular with furniture these days, so we set out to make a nail head headboard. First, Fletcher got a piece of wood cut at home depot. Then we got quilter's batting (from a fabric store) and used a staple gun to attach the batting to the wood. You had to be sure to pull the batting tight, then staple...

Next, we picked out the fabric, and used the staple gun again to cover the batting with the fabric. We wanted something neutral, but the decision was hard because of all the choices out there! We were drawn to the linen fabric, and even burlap, but finally settled on a brown textured fabric (Hancock fabrics).

At first we bought a package of nail heads from Lowe's and began nailing them in one at a time. This was a MISTAKE. It was really hard to get them to stay straight, and it would have seriously taken a lifetime. We ended up ordering a nailhead trim kit from http://www.beaconfabric.com/vindex.html.
This was much easier because it was already attached in a line, and you nailed in a nail every 5 nails.

It was still tricky keeping it straight, but in the end Fletch made it perfect.

And when I keep saying "we stapled" "we kept it straight", don't be fooled...I was mostly watching, as was the faithful dog Molls. She would sit as close as she could to the action, and then every time Fletcher would start to nail she would jump up and walk away. Over and Over again she came back then ran away.

I was so pleased when it was all done! I love having a husband who is good at projects! I like the idea of projects, but I have some trouble with the execution! So now y'all all need to come stay in our guest bedroom!

Happy Valentine's Day!

Happy Valentine's Day!
One of my favorite things to make is strawberry cake, and valentine's was the perfect excuse to make some! My mom had given me some cupcake liners and cupcake stencils in my stocking so fletcher and I tried those out last night and decorated the cupcakes together! Both my mom and my mother-in-law are always giving me fun new baking tools and accessories! We enjoyed decorating the cupcakes until the kitchen was such a disaster we had to call it quits!

It is so nice to have a sweet mother/mother-in-law to give me new baking goodies to try! And fun to have a valentine who will decorate cupcakes with me. Hope your valentine's day has been great!

M&M Valentine's Cookies

This is valentine's treat #1 that I enjoyed making this weekend. I made these cookies on Saturday and they have gone very fast! Also, the recipe isn't limited to Valentine's day. Switch out the m&ms and you can make them any day of the year!

I was excited because I had almost all of the ingredients on hand, which is always exciting when trying a new recipe.

Cream together shortening, sugars, eggs, and vanilla thoroughly. Then gradually add in the flour and mix well.

Stir in m&ms and chocolate chips...

Put dough on greased cookie sheet and bake at 375 for 10-12 minutes.

I used my heart-shaped cookie cutter on some of them, but not all of them so that I wouldn't waste too much cookie!

M&M Cookies
1 cup vegetable shortening
1 cup brown sugar
1/2 cup sugar
2 Teaspoons vanilla
2 eggs
2 1/2 cups self rising flour
1 cup m&ms
1 cup semi-sweet chocolate chips

Friday Night Dinner...

One of my favorite things about Fletcher is his desire to recreate things. When I see something I like he has a common response of, "we can make that", whether it be food or projects around the house. It is so fun to have him around to help me figure out how to make things. One of the things that I L-O-V-E is the Grilled Chicken Sandwich at Amsterdam Cafe in Auburn (And I miss this restaurant LOTS). We recreated the sandwich one time while we were still at Auburn, so Friday night when we were craving Amsterdam, we knew the sandwiches would hit the spot...

Here's what ya need.

First, we put the ciabatta bread in oven on broil for just a few minutes to toast the bread, then added the chicken and bacon.

Then you put the cheese on top and put it all in the oven on broil...beware of the broiler---you have to watch it very carefully.

Wait until it comes out of the oven to add the spicy mayonnaise. And of course I went easy on the spicy mayonnaise because I don't like things too spicy!

And what was our side item? Sweet potato chips, of course! Just like Amsterdam itself. It was delicious!

Addicted.

This morning on the today show they were talking about how terrible it is to drink a diet soda a day...I was rushing out the door so I didn't get the full story, but something about they did a 10 year study on people who drank one every day and they had a significantly higher rate of strokes and heart attacks. I have gotten to where I drink two, maybe three a DAY. Oops...how did I get here? I'm not really sure. It has to do with the fact that 10 feet outside my office is a fountain drink machine, and we all know that fountain cokes are the best. It started with a "it's 4 o'clock and I need a pick me up" drink. Then it came at 2, then probably 12...so the earlier I start the more I drink. So today I'm turning over a new leaf, and beginning the transition from multiple diet cokes a day to maybe just a few a week? We'll see how this goes...

Weekend in Memphis...


This weekend we hit the road to Memphis, and enjoyed a relaxing weekend with my family. One of the main highlights was Saturday night....The moment Lacey and I have seriously been hoping for for the last 7 years... (dramatic? Probably.)

Steven and Maggie went to the Valentine's Dance together. My little brother + my best friend's little sister = the moment we've all been waiting for.

But seriously, it has been really fun to see Steven and Maggie become friends, and it was fun to be back at the Little's house taking pictures for a dance! It was weird to watch them stand on the same steps we stood on when we took all our high school pictures, but to not be the one going to the dance.

We all went to the Littles for the pictures! At one point Ev was making jabbering noises and one of the high schoolers was like "Is there a BABY here??" "Yes, tan girl in the short dress, there is a baby here." I didn't really say that, but I felt like saying it. The dresses have definitely gotten shorter since I left high school.

Every time we see Ev she is bigger and seems so much older! It is fun to see her change but always makes me wish I could see her more. She loves dogs and she likes to jabber. It is funny to see her look at her books and turn the pages and jabber like she is reading it. It was a great weekend, that went by too fast!
