Goodmorning Sunshine.

For probably the past month I have been checking the 10 day forecast every day in hopes of trying to predict what the weather will be on November 6th. Today November 6th has made it to the 10 day forecast! We still have ten days for that little cloud to disappear, but high of 72 is good! I didn't want it to be too cold. Another fun weather fact, November 7th is daylight savings time, so all my sleepy guests will get an extra hour of sleep!

Happy Birthday Steven!

Happy Birthday to my little brother who is sadly no longer so little! Today Steven turns 17! I really can't believe it. Wasn't I just 17??


In just 10 shorts days this sweet boy will walk me down the aisle to give me away. Below is a picture of how small he was last time he walked his sisters down the aisle! Quite the task for a teenage boy, but I will be glad to have him at my side on November 6th!

I love you birthday boy! Hope you have the best day ever! I wish I were there to celebrate with you. We are glad you made your debut into our family 17 years ago!

Speak Now.


This is what I'm currently listening to on repeat. I could drive around in my car all day just trying to learn the words! Fletch bought it for me yesterday and its all I could think about all day, I couldn't wait to get it in my cd player! It is really different than what Taylor Swift's cds have been like in the past. It hardly sounds country at all! Some of her songs are kind of avril lavigne/paramore-ish! I still give it 2 thumbs up! If you want it for a good price you can download the mp3 version on Amazon!

Wonderful Weekend

What do you do two weeks before your get married?
1. Pack up all your stuff in preparation to move in just a few days
2. Pack for the honeymoon
3. Work on little wedding day details that seem to have slipped your mind up to this point
4. Write the many looming thank you notes
5. Visit your best friend

Can you guess which one I chose for this weekend? Obviously amidst all the stressful/tedious options, visiting your best friend stands out as the obvious choice. This weekend I went to Nashville to visit Lace one last time before I tied the knot and it was the perfect weekend! I decided not to leave until Saturday morning because I had to work late on Friday, and on Friday night I convinced Anna that she just drive from Dothan to Birmingham to hitch a ride with me to Nashville. Anna's boyfriend is in law school at Vanderbilt and she didn't have much going on in Dothan this weekend so after some convincing from me she got in the car at 8:30 on Friday night and drove to Birmingham, pulling in at midnight on the dot! It was SO fun to see her unexpectedly and of course it made the car ride 1000x better! Saturday morning we woke up at 6:30 and hit the road by 7:30 in hopes to make the most of our Saturday in Nashville.

If you'll notice we have all the essentials for an early morning car ride. Chicken biscuits, large coffees, ipod, cell phone, GPS, and of course...last but not least, finger nail polish!

Once we arrived bright and early in Nashville Lace and I headed to Centennial Park for a picnic. Pimento cheeses + fuji apples + pita chips + Lacey's sweet tea = perfect.

If I had my camera at hand all weekend then I would probably have taken 100 pictures of the trees! All the leaves were changing and it was absolutely beautiful. During half time of the Auburn game Lace and I went on a walk and we were loving the fall leaves! After cheering our tigers on to victory we went to Franklin and met Kree for Mexican. Delicious!

After our delicious Pancho's we went and saw Life as We Know It. It was just like it used to be in auburn, mexican + the movies. The only thing missing were the rest of the beach house, and of course the popcorn bucket! I LOVED Life as We Know It! So cute! I'm no movie critic, I'm just a sucker for a good romantic comedy!

I am very pleased with my decision to head to Nashville for the weekend. I mean look how cute Lace is! You would want to visit her too if she was your best friend! We definitely had a packed weekend! Picnic, Auburn Football, Walks, Mexican, Chick Flick, Shopping, Pillow Talk, and much more!

Wednesday Night Updates

I am officially really bad at answering my phone. I've been pretty bad at the past couple of months, but I feel like I have gotten worse in the last week, and I don't picture it getting any better in the next two weeks. Everyone has been so sweet to be excited about how close the wedding is, and really interested to get updates, so as lame as this is, here they come...

1. We have somewhere to live! This has been quite the headache over the last few months, we wanted so badly to buy a house but after a few houses didn't end up being what we had thought, we knew we were out of time and had to find somewhere asap. We found a townhouse to rent on Monday and signed the lease yesterday. It is 1 minute from where I work, 2 minutes from Publix, and 3 minutes from the Summit...talk about convenient! I have to be moved out of my house now by the 31st, we are moving our stuff in on the 30th...down to the wire!

2. I have started to wake up almost every hour of the night. I don't feel specifically anxious about any certain thing, but my subconscious must be anxious! I feel like there are still alot of little details left to do and I am so scared I'll forget something.

3. I don't have anything to wear to the rehearsal dinner! A girl at work is very concerned about me, her exact words to me yesterday..."Have you found something yet?? I mean I can't believe you. I was in a panic until yesterday because I didn't have an outfit for halloween, I can't believe you don't have a dress!" We have this conversation every day, and it never fails, someone walks up in the middle of the conversation and thinks I don't have a wedding dress yet! But seriously...any suggestions, PLEASE let me know. I'm picky and want it to be perfect, I think thats why I'm having so much trouble!

4. My room is a disaster. Having to pack up my summer clothes, clean out my old clothes, pack up my stuff to move, and pack for the honeymoon has proved itself to be quite the task. I feel like I need to post a picture for those of you who think I'm super organized, just so you'll know the truth! But alas, I'm too embarrassed!

And just so I don't leave you with a completely pictureless post...

I was DYING to get this candle a couple weeks ago, it smells incredible and smells just like fall happiness. Fletcher however, not convinced it was worth the money. He explained to me exactly how many minutes I had to work to earn the amount that the candle cost and asked me if it was worth it, to which I replied YES! The story ended with him finding the BABY version of the candle and telling me I could get that one. Well I've lit it like 3 times and blown it out after 15 minutes each time because it was wasting away. So tonight I went to target (unsupervised, this is what happens when Fletcher works at night) and decided that in celebration of having somewhere to live we needed the big candle! It was on sale, and I bought it! It makes me so happy! (Please note baby candle to the left.)

Banan Muffins

Anna came and spent the night with me last week on her way to Nashville for fall break. I decided to make some muffins for her arrival, which was very funny because when she walked in the door she said "Steph, I brought you a surprise!" And it was pumpkin muffins! I made banana muffins, which was fitting because we all call her "banan" but I decided to make the recipe because I had some bananas going bad! So here it is...


First, preheat oven to 250 and bake pecans in a single layer in a shallow pan for 8 to 10 minutes.

Beat butter at medium speed until creamy. Gradually add brown sugar, beating until light and fluffy. Add eggs, 1 at a time, beating until blended after each addition.

Stir together mashed bananas, buttermilk, and vanilla.

Stir together flour and next 3 ingredients; add to butter mixture alternately with banana mixture, beginning and ending with flour mixture. Beat at low speed just until blended after each addition.

Spoon batter into lightly greased 12 cup muffin pan, sprinkle with toasted pecans. Next time I think I'll mix pecans in with the batter as well.


Brown Sugar Banana Muffins:
1/2 cup chopped pecans
1/2 cup butter, softened
1 cup firmly packed brown sugar
2 large eggs
1 cup mashed bananas
1/4 cup buttermilk
1 tsp. vanilla extract
2 1/4 cups AP flour
3/4 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt

If you're happy and you know it...

Clap your hands. I ordered TOMS last week, and was SO excited when they arrived last night. All day I've been looking down at my feet and they make me so happy. They are also very comfortable! I'd recommend them for sure!

Taco Ring

This recipe is super easy, and its really good! It all started with this...

Pancho's is REALLY yummy cheese dip, but they only have in the grocery stores in Memphis! So its one of the things that I always love about going to Memphis, my mom always has pancho's in the refrigerator! Since Fletcher couldn't come with me this weekend, I thought I would bring him back some Pancho's. So last night I planned dinner around the cheese dip! This is a pampered chef recipe that I found on a blog. Since we are lovers of all things crescent roll, and I love all things Mexican, this recipe is definitely a favorite for us!

Preheat the oven to 375. First you brown the meat, then drain and add water and taco seasoning.

Next, you add the 1 and 1/2 cups cheese to the pan and mix together.

Use 2 cans of crescent rolls to form a ring on a baking stone or a baking sheet (spray with pam if using baking sheet!)

Add the meat/cheese to the center of the ring...

Fold the crescent rolls in to the center...

Brush with (lightly whisked) egg white and sprinkle with cheese. Then put it in the oven to bake for about 25 minutes.


Take it out of the oven, and enjoy! We added sour cream and tomatoes on the side to eat with it, but you could really add any variety of Mexican toppings.

Taco Ring:
2 cans crescent rolls
1 egg white, lightly whisked
1-1.5 lbs lean ground beef
1 pkg taco seasoning
1 3/4 cup shredded cheddar cheese (I had Mexican variety on hand)
2 Tbsp water
Taco toppings of your choosing

Kitchen Shower



This weekend my mom's prayer group gave me a Kitchen shower. It was such a sweet time with my friends, as well as my mom's friends. I got TONS of great kitchen things! I got some big things-Kitchen aid mixer, food processor, crock pot, etc...as well as all the great small utensils and kitchen tools. Also, they had all the ladies write down an "ingredient" for a happy marriage, which was really special to hear such valuable advice. And it was neat because there were people who had been married a few months (Sarah and Emily) and people who had been married years and years, it was a great combination of ingredients.

Grammy gave us a quilt that she had made back in 1996! I told her it was a good thing I ended up getting married or else I wouldn't have been able to get the quilt! I love quilts and it is such a special gift that will last us forever.

One of the things I have been continually struck by during our engagement is the support of our friends and families. My family, friends, my mom's friends, fletcher's family, his family's friends...all have just showered us with love and support,and it has been so humbling for so many people to share in our excitement. I am thankful for friends and family!

The rest of the weekend in memphis was the perfect blend of productivity + relaxation. I took Monday off work to stay in Memphis and knock things out. My mom and I spent the weekend buzzing all over Memphis to cross things off our list. When I was leaving it was hard to believe I won't be home again until the big event!

Jambalaya

I have been debating back and forth about whether or not to post this recipe...I made a couple mistakes while making this, mainly due to my impatience and so it wasn't my favorite thing I've ever made. But, I think it is a good recipe and is worth being posted. Also, Fletcher really liked it. Sweet boy likes things even when they don't taste right!

The recipe called for a rotisserie chicken. So the first thing I did was pull the chicken and cut it into bite size pieces. Next I cut up the sausage into 1/4 inch thick pieces and cooked the sausage in a dutch oven over medium heat. Stir occasionally, and cook about 5 minutes.

Then I added the bell pepper, stirring occasionally. Once the pepper was tender I stirred in the tomatoes and green chiles. Next I stirred in the chicken broth, one cup of water, garlic powder, and cajun seasoning.

Lastly, you add the chicken and rice. Cover, reduce heat and let it simmer until 30 mintues or until rice is tender. This is where I made the mistake...I didn't cover it properly, so since it wasn't completely covered it took FOREVER for the rice to cook. And finally I got so impatient that I just decided it was finished. But the rice wasn't quite tender enough.

Chicken and Sausage Jambalaya
1 deli-roasted chicken
1 lb. smoked sausage
1 medium bell pepper, chopped
1 small onion
2 (10 oz) cans of mild diced tomatoes and green chiles
1 can chicken broth
1 tsp. garlic powder
1 tsp. cajun seasoning
2 cups uncooked long-grain rice

Today is this girl's 23rd Birthday! Since we met on AIM the summer before freshmen year (to discuss summer reading of course) we have celebrated so many things together. So today I'm wishing I could celebrate with her in person!

This birthday is particularly exciting because it is her first birthday as a married person! So here's to Mrs. Jordan Thompson having the best 23rd birthday ever! Happy Birthday Whitney!!
