Double Time

Yesterday when I got to work one of the guys in the kitchen asked me if I was hungover. I thought "no I look like this because I worked 13 hours yesterday" but instead I said "No, I'm just that tired." So this morning in an effort to NOT look hungover I woke up earlier so that I could have 2 cups of coffee...hoping that might help. I'm undecided whether or not it had any effect on the way my eyes look. Fletcher and I are taking our engagement pictures this weekend (I know its late in the game) and I need to figure out how to not look hungover in the pictures! If you have any suggestions for how to give a boost to your eyes, let me know. Is it time for me to whip out some cucumbers?

My job...

I feel like most of my readers know where I work, but for those who don't I thought I would introduce you to my job at Ashley Mac's. I started working at Ashley Mac's on June 1st and I recently have become the Director of Catering for Ashley Mac's. It has been both super exciting and super challenging to be a part of a business that is in the midst of so much change and growth. This past week has been crazy because we are working on opening our new location in Cahaba Heights. We had our big Open House today and then the Cafe opens on Thursday! If you live in the Birmingham area you should definitely come by and try the cafe, I've tasted all the sandwiches and it is going to be delicious!

The Open House today was definitely a success! I feel so behind on wedding planning because everything has been so crazy at work. I have been working really long days and this week I could hardly hold my eyes open past 9 o'clock! I feel like there is so much to do and so little time. And I also feel like there is so much going on that I want to blog about but so little time to do it!

This weekend was my bachelorette party and it was the perfect weekend! First of all, Sarah Beth had told me she wasn't going to be able to come and then both she and her family switched their plans so that they could come, but she hadn't told me. So Anna, Kari, and I were about to hop in the car and go and then all the sudden Sarah Beth appeared! It was the best surprise!! We went to Lacey's lakehouse at Pickwick and it was the perfect setting for relaxation and fun. Lacey was a busy bee all weekend since she was hosting us all and Allison and Abigail worked hard and made us such great food!

On Saturday night Allison, Abigail, and I all slept in a king bed. I couldn't fall asleep on Saturday night just laying there thinking about how it was so rare for us all to sleep together and how we were all about to be married. I really can't believe it! Sweet Ab traveled so much to be there for the weekend and I was so happy to see her.

The whole time we were on the tube Anna kept assuring us "We got this girls" as we were flying all around.

Kree definitely gets the award for the one who does the best at staying on the tube. This picture doesn't even capture her skills.

I had to capture Allison wakeboarding! So that one day Ev can see what her mom was up to when she was only 5 months old!

We had grilled chicken kabobs and grilled vegetables for dinner. Everything tastes better on a grill! Lauren helped Allison and Abigail to get everything grilled.

The weekend was just perfect! I got showered with good things and we spent the weekend relaxing and laughing ALOT. I am so thankful for such sweet friends and my sweet sisters!

That is the number of days between now and November 6th. I can't believe how soon it is! As the days get fewer and fewer I feel myself overcome with great excitement as well as great panic. The knot emailed me this week and asked if I was still getting married November 6th They are probably getting overwhelmed by the large number of unmarked things on the to-do list. But I gave up on looking at their to-do list a long time ago! There is alot left to do and a little time to do it...which has accounted for the lack of blogging this week. I've been working on thank you notes, musicians, and mostly stressing over invitations. I will jump for joy the day the invitations are finally out and on their way to people's mailboxes! But in the midst of all the stress I find myself picturing November 6th at 6:00 and what it is going to feel like to walk down the aisle to marry my best friend. So if there is no guest book to sign, no napkins at the reception, no invitations in people's mailboxes...there will still be me and fletch making a covenant before the Lord, and that is what I eagerly await!

Weekend in Memphis

Fletch and I spent Labor Day weekend in Memphis with my family. We checked a few things off our to-do list and we got to spend a lot of time with my family. It was a perfect weekend that I didn't want to end!

Saturday night we got Commissary BBQ and watched the Auburn game on TV. It was so weird/sad to watch the game on TV, but if I had to be watching it on was the perfect way to do it!

Ev got to catch the beginning of the game before it was time for her to go to bed. She is already an Auburn fan. Good thing her daddy wasn't there to convince her otherwise!

It was so fun to play with ev! She is getting so big! She takes baths, reads, books, and even does baby yoga! When we left I told her not to get too big before I saw her again!

Shrimp + Tomato Grits

On Tuesday night, sweet boy made me this dish for dinner, and it was delicious!!! I feel the freedom to rave about this meal because I didn't make it myself and it isn't my recipe. Let me start by saying this...I don't really like grits. I never get shrimp and grits at weddings or formal events and I typically avoid eating them if I have a choice. So if you like grits, or if you don't, TRY this recipe! Just to give you a mental image of the preparation...Fletch did everything while I sat and watched wheel of fortune. But of course I got up for the occasional photo opportunity...

And the final product...YUM!

1 1/4 c. milk
1 tsp. salt
1 c. quick grits
1 stick + 1 Tbsp. butter
1/4 c. thinly sliced scallions
1/4 tsp. garlic powder
2 1/2 c. shredded cheddar cheese
1 can Ro-Tel Tomatoes

Heat oven to 350. Lightly grease 2 qt baking dish. Boil 2 cups water and milk. Add salt. Then slowly add grits and return to boil, stirring constantly for 1 minute. Reduce heat, cover, and let cook for 3 minutes. Add 1 stick butter, stir until melted. Cover and cook 3 minutes, until thick. Remove from heat, set aside. Melt remaining 1 Tbsp. butter in skillet and add scallions and saute 1 minute. Add to grits, along with garlic powder and 1 1/2 cups cheese. Stir until cheese melts. Add tomatoes, mix well and then pour in baking dish. Bake for 40 minutes. Sprinkle remaining cheese on dish for last 5 minutes. Fletch cooked the shrimp in a skillet with butter, scallions, and garlic powder. Then he set it aside until the grits were ready and put shrimp on the top.
