Wednesday Night Updates

July is almost over and the "July To Do List" at the front of my wedding binder still has some unmarked things, we'll see what I can get done in the next 3 days!

I feel like alot has been going on, but then not much to blog about at the same time. I've been eating frozen dinners all week, and I've felt a little under the weather, so that has made things pretty uneventful as well. But here is what has been going on most recently...

I got a wedding dress!!

We booked everything for the reception and finalized the menu

We've registered everywhere we want to register

We've scheduled pre-marital counseling

We took my ring to get resized and I have been without it for the last 3 days and will be without it for 8 more days!

We have a couples shower on the calendar

We have my bachelorette party on the calendar

Tomato-Basil Pasta with Shrimp

I haven't really been very motivated to cook. I don't have a stocked kitchen, so I'm intimidated by the amount of ingredients I need for every recipe, and every day when I get off work there seems to be so much to do. But Fletcher and I had a little pow wow and decided we need to be better about cooking. New recipes are always exciting to me, so we tried this one last night.

First, boil the pasta...

While the pasta is boiling heat 2 Tbsp. sun-dried tomato dressing in a skillet...

Once it is boiling, add the shrimp, cooking 2-3 minutes on each side. Once shrimp are pink, remove from skillet, and set aside. Cover the shrimp to keep them warm...

Clean out skillet and then add remaining dressing, chicken broth, and seasonings to skillet. Cook 2 minutes. Add neufchatel cheese, cook and stir until melted.


While I was working on the skillet mixture, Fletch cut up the grape tomatoes and the fresh basil leaves. Then we added them to the mixture...

Once the pasta was cooked, we drained it and added it to the skillet...

Last, but definitely not least, we added the shrimp!

The dish was a success and we have leftovers! It was a very flavorful dish, definitely one we will do again.

Ingredients:
3 cups Farfalle (bow-tie pasta), uncooked
1/4 cup KRAFT Sun-Dried Tomato Dressing, divided
1 lb. uncooked peeled deveined medium shrimp
1 cup Fat-free reduced-sodium chicken broth
1/2 tsp. each garlic powder and black pepper
4 oz. (1/2 of 8-oz. pkg.) Philadelphia Neufchatel Cheese, cubed
2 cups Grape tomatoes
1/2 cup KRAFT Shredded Parmesan Cheese
8 Fresh basil leaves, cut into strips

Weekend Part II: Family

As I put these pictures on my computer I realized that as much as I enjoyed spending time with each and every one of my family members, there is one particular family member that I seemed to get the most pictures of. I'm sure no one is surprised by that! Every July Ab and Matt make a "trip across the southeast" and see Matt's family and our family. When they come, we all come! Since we don't see them as much as we would like because Charleston is kind of far away, we take any chance we can to see them. And our cousins and Aunt and Uncle even came across to participate in the family time! It was so great. I missed alot of the family togetherness but the time I did spend with them was great. So consider this beginning of the Evelyn show. She's the only one I really have pictures with!

Ev loves SuSu!

Grammy always says Allison and I sound the exact same on the phone. So I have a secret hope that Ev will think I seem familiar because I have a similar voice as her mom! I don't think it really works like that though.

Ev loves Uncle Fletcher! I think she knows that they have a special birthday bond! Both April 21 birthdays! Only 24 years apart!

No matter how happy Ev is with all of us, she loves her mom the most! I think Evelyn is one of the happiest babies! She is almost always smiling or making sweet little noises.

In addition to spending alot of time with friends and family, Fletcher and I got alot done this weekend. We met with the invitation lady to design our invitation, we registered at Gift & Art (which meant picking our everyday and fine china...took over 2 hours!), we met with the florist, we researched rehearsal dinner places, we picked a reception spot, and I got my stringy hair cut! It was quite the weekend. I started out saying this weekend was a whirlwind, but I think I have used "whirlwind of a weekend" before and I probably am going to feel like saying that about every weekend between now and November 6th, so I refrained from making that the title of the blog post. I feel good about what we are getting done, and still overwhelmed by what is left to do. One day at a time I guess!

Weekend Part I: Mr. and Mrs. Jordan Thompson

I had alot of trouble imagining putting everything that happened this weekend into one post. So I'm going to break it up into 2 posts. However, after loading all 285 pictures onto my computer I had a really hard time choosing which ones to put on here. So be prepared for alot of pictures!! The first part of the weekend was filled with Jordan and Whitney's wedding festivities.

I didn't do a very good job on Friday night of taking pictures at the rehearsal dinner. But here is one of me and Fletch.

After the bridesmaids luncheon (another event I didn't take many pictures of) we were off to the church to get ready! Whitney gave us all pink robes with our initial on it as a bridesmaids gift. It was fun to get ready on Saturday and wear our robes!

Next, it was time to put on the dresses! Mrs. Prude and Cam helped get Whitney in her dress.

It was so fun for all the bridesmaids to be together! And I loved getting to see Kelli! It made me miss being in Auburn!

Whitney and Jordan didn't talk to each other all day, but they each wrote a letter to each other. Jordan's letter made whitney laugh and cry!

Sweet Mawmaw was a part in all the activities! She was so thrilled for J and Whit and it was so great to get to spend time with her.

The ceremony was really sweet. Jordan and Whitney were both so happy, and it felt very much like a celebration. And it was so exciting for them to get married after so many years of dating long distance! That is definitely a reason to celebrate! The reception was at Center for Southern Folklore. It was a night full of fun and lots of dancing.

Then before we knew it we were seeing them off. They were off to Mexico for their honeymoon!

Nothing's Sweeter Than Summertime...

It has hardly felt like summer since I have entered the real world. The only thing to remind me that it is summertime is the blistering heat. But the days of laying in the sun, eating snobiz or ice cream, and spending lots of time outside by the water have been nonexistent. So this weekend at the lake was just what I needed! I left Friday night after work and headed to Pickwick to spend the weekend at the Little's. We have been going to Lacey's house every summer since Sophomore year! It was so great to be back again and to get to spend time with Lacey and her family, and Julie got to go too! We spent Saturday and Sunday on the lake tubing and riding the jet ski. Mrs. Little took pictures of us tubing but I don't have any to share with you. Mrs. Little has taken pictures every single summer, and I was looking at them this weekend and realizing that I look the exact same in the pictures from every summer. This summer my 22 year old tubing self looks no different than my 15 year old tubing self...Sad. While we were getting thrown around on the tubes Lacey asked when we were going to be too old to tube anymore. When I've woke up sore three days straight, I'm beginning to wonder if that time has come! But I can't be that lame...Saturday night we went out on the boat to drive to see the fireworks.

It was so relaxing to sit in the back of the boat and just enjoy the fireworks.

The weekend was the perfect combination of relaxation, time with friends, and fun on the lake. The work week came back around entirely too soon! But I can't complain because I'm leaving after work on Thursday to go home for Whitney's wedding festivities. So yay for a 3 day work week!!
