Coconut Joys

This was so easy and fast that there is no reason not to try it if you like coconut or more specifically if you like Almond Joys! First I chopped up the almonds, measured out the coconut, and melted the chocolate chips.

Next I mixed together the coconut, butter, and powdered sugar, then formed them in 1 inch balls. Then I took the end of a spoon and used it to make an indention in the center of each ball. After that I poured the melted chocolate into the indention and topped with the chopped almonds. I topped a few of them with chopped pecans, but most of them were topped with almonds.

Once I was finished topping each coconut ball I put it in the refrigerator to chill for about 2 hours. I haven't tried one because I'm not crazy about coconut...but SuSu gave it the thumbs up! She says they are very good!


Measurements:
1 and 1/2 cups flaked coconut
1 cup confectioners' sugar
1/4 cup melted butter
1 oz. semi-sweet or milk chocolate chips, melted
2 tbsp. chopped almonds or pecans
