Brownies and Books

Tonight my mom and I made brownie strawberry shortcakes. It was so simple and they were tasty! First we just made brownies from a box mix.

Then we mixed together 2 and 1/4 cups milk with 2 boxes of vanilla pudding mix. We mixed until it got thick, then we folded in 2 cups of cool whip.

We cut up strawberries to put in the middle and on the top of the brownies.

One brownie on the bottom, topped with the pudding mixture, then strawberries on top of that. Then brownie, pudding, strawberries, again. We made half the brownies with nuts and half without.

So far my time in Memphis has been very relaxed. I have a mile long to-do list but I just try to mark a few things off every day. So when I'm not unpacking from Auburn or preparing for my upcoming move, I'm usually just hanging out with Lacey or hanging out at home. And my time at home has involved a lot of reading. The last few weeks of Auburn I read the Redemption series by Karen Kingsbury and now I am attached to the Baxter family! The Redemption series is followed by two others sets of books. So I have now finished 6 of the 14 books. Eight to go!
