Cookies and Cream Cupcakes

I received so many fun cupcake books and accessories for my birthday that I didn't even know where to start. I was looking through one of my cupcake books and found this recipe, I decided it was summery and fun so last night I tried it. First of all, look how cute these cupcake liners are!

The recipe called for 2 lbs. of cream cheese, 42 oreos, 1 cup of sour cream, 1 cup of sugar, 1 tsp. of vanilla, and 4 eggs.

After creaming the cream cheese and sugar, you add in the sour cream and vanilla. Then lastly you add in the eggs, one at a time.

Next, you mix in the crushed oreos (about 12 cookies, crushed) by hand.

Then you place one whole oreo at the bottom of each cupcake liner, then pour the batter on top.

They bake at 275 for 22 minutes.

After they come out of the oven you let them cool (still in cupcake pan) and then put in the refrigerator for atleast 4 hours, I left them in overnight. They are like a miniature oreo cheesecake, Yum!
