Turkey Salad

When Allison was in Memphis for Christmas she brought some Turkey Salad from a place in Little Rock, and we all absolutely loved it! I have had my fair share of chicken salad over the years, but never turkey salad. Considering I don't live in Little Rock, and I'd never had it anywhere before, I decided I was going to need to try to make it if I ever wanted to have it again. So today I had a free afternoon (which I have forgotten are the best things in the world because I was either in class or worked every afternoon last semester) so I decided I would try it out.

I used Boar's Head smoked turkey, a little cheese, mayonnaise, relish, salt, and boiled eggs.

First I put the turkey in the food processor, at which point I decided that a little cheese might be a good addition.
Next I processed the boiled eggs and relish, and then added them to the turkey. I didn't add a picture, because honestly the egg and relish combination was not very appetizing looking. So then I added the mayonnaise and some salt. Anna was helping me taste test, and this part was really fun because I hadn't had a recipe and had guessed on all the proportions, so we really had to taste and then think about what it needed. So after adding a little more relish, and some more salt, we decided it was finished!
